Sesame Chicken Kebabs


Ingredients

500g chicken thigh fillets, skin off
1 Tbsp sugar
1 clove garlic, crushed
1 Tbsp sesame seeds
½ tsp white pepper
1 Tbsp olive oil
1 Tbsp soy sauce
4 green onions, cut into 4cm lengths

Method

1. Cut each fillet into 6 and combine with remaining ingredients. Set aside to stand for 15 minutes or longer, if possible.

2. Thread chicken onto four skewers with green onions and cook on lightly oiled barbecue plate or cook under grill for approximately 10 minutes, or until cooked through.

Serve with a leafy salad or steamed vegetables

Pandang Mushroom and Beef Curry


Ingredients

2 tbs peanut oil
500g beef fillet or sirloin steak, cut across
the grain into 1cm-thick slices
1/4 cup panang curry paste
300ml can coconut cream
300g flat mushrooms, trimmed & thickly sliced
1/2 medium red capsicum, quartered, deseeded
& thinly sliced
1/4 cup fresh coriander leaves
1/4 cup unsalted roasted peanuts, roughly chopped
steamed jasmine rice, to serve

1. Heat a wok over high heat. Add 1 tbs oil & heat until hot. Add 1/2 the beef & stir-fry for 2-3 minutes or until evenly browned. Remove to a plate, cover loosely with foil & keep warm. Repeat using the remaining oil & beef.

2. Add the curry paste to the wok & stir-fry over high heat for 1 minute or until aromatic. Add the beef & stir to coat in the curry paste.

3. Add the coconut cream & mushrooms to the wok. Stir to combine & bring to the boil over high heat. Reduce the heat to medium-low & simmer for 5 minutes. Stir in the capsicum & cook, stirring constantly, for 1 minute.

4. To serve, spoon the curry into serving bowls & top with the coriander leaves & chopped roasted peanuts. Serve with steamed jasmine rice.

Asian Fish Parcels


Ingredients

4 thick white fish fillets
1 carrot
1 small red capsicum
2 spring onions/green onions
Dressing:
2 tbs lime juice
1 small red chilli, chopped finely
1 tsp honey
1 tbs light soy sauce
1 clove garlic, crushed
2 tsp sesame oil
1 tbs chopped fresh coriander
Multix Alfoil

Place each fillet on a sheet of Multix Alfoil and season with freshly ground salt and pepper. Make a foil parcel, place on a baking tray and cook for 15 minutes in a 180°C oven.

Cut carrot, capsicum and green onions into long thin strips. Carefully open the parcels and top fish with vegetables. Reseal and bake for another five minutes. Meanwhile, combine all ingredients for the dressing in a bowl and mix well.

Drizzle fish with dressing and serve with steamed jasmine rice.

Avocado Pizza


Ingredients

1 prepared pizza base
3 tablespoons tomato paste
1 clove garlic, chopped finely
1/4 cup chopped shallots
1/2 cup sliced mushrooms
1/3 cup sliced olives
100g cherry tomatoes, halved
1/2 cup shredded mozzarella
1/2 cup fresh basil leaves
1 avocado, sliced

1. Spread pizza base with tomato paste, sprinkle with garlic and shallots.

2. Arrange mushrooms, olives and cherry tomatoes on pizza base. Top with cheese and bake in a moderate oven, 180°C, for 20 minutes or until crust is golden.

3. Remove from oven, serve topped with basil and sliced avocado. Makes 8 slices.
