Spaghetti Marinara
Ingredients
2 tsp olive oil
1 onion, finely chopped
1 tsp Crushed Garlic
1 x 400g can diced tomatoes
1/2 cup white wine
500g spaghetti
125 grams white-fleshed fish fillets, cubed
300 grams green prawns, peeled
250 grams scallops, deveined if necessary
250 grams mussels, scrubbed and debearded
2 tbsp Italian Herbs
Method
Place oil, onion and crushed garlic in large saucepan over low heat and cook slowly until onion is golden, about 3 minutes.
Add tomatoes, white wine, herbs and salt and pepper to taste and simmer, covered, for 10 minutes.
Cook spaghetti so it is ready by the time the seafood is cooked.
Add fish and prawns to tomato mix and simmer 3 to 5 minutes until tender and no longer translucent.
Stir in scallops and mussels and simmer, covered, for a further 2 to 3 minutes until mussels open; discard any that do not open.
Toss hot cooked spaghetti with sauce and serve immediately.
