San Choy Bow
Serves 4
Ingredients
500 g beef mince
2 tsp chicken stock powder
2 tsp cornflour
2 tbsp canola oil
2 cloves garlic, crushed
2 tsp ginger, grated
225 g can sliced water chestnuts, drained and roughly chopped
2 tbsp kecap manis
2 tbsp coriander
2 green onions, sliced
1 birds eye chilli, thinly sliced
lettuce cups to serve
Method
1. Combine beef mince, stock powder and cornflour and coat in oil.
2. In a hot pan, stir fry mince in 3 batches for 5 mins. Set aside.
3. Add garlic and ginger to pan and sauté 30 seconds, then add water chestnuts, sauce and mince back to pan heat through. Toss through chopped coriander. Scatter with green onions and fresh chilli and serve in lettuce cups.
