Lamb Chilli Con Carne
Serves 4
Ingredients
750 g lamb mince
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, crushed
1 tbsp cumin seeds
1 tbsp ground cumin
1 1/2 tsp chilli powder
2 cups chicken or beef stock
1 x 400g can chopped tomatoes
2 tbsp tomato paste
1 tsp dried oregano
300 g can red kidney beans, rinsed and drained
1/2 cup sour cream
2 tbsp chopped chives
corn chips or rice to serve
Method
1. Heat half the oil in a large saucepan. Add the onion and cook over a medium heat until soft and golden. Remove from the pan. Add the remaining oil and brown the lamb mince in batches.
2. Add the garlic, cumin, chilli powder and return the onion to the pan. Cook for another minute while breaking up any lumps with a spoon.
3. Add the stock, canned tomatoes, tomato paste and oregano. Bring to the boil then reduce the heat and simmer for 1 hour. Season to taste and add the red kidney beans. Heat through.
4. Spoon into individual bowls and top with the sour cream and chives. Accompany with corn chips or rice.
