Gluten Free Chocolate Cupcakes
Ingredients
1 1/4 cups of Gluten free self-raising flour
50g butter
2/3 cup of castor sugar
1 egg
1/4 teaspoon salt
5 tablespoons milk
1 tablespoon cocoa
50gm grated chocolate
1/2 teaspoon vanilla essence
Method
Sift flour, sugar, cocoa and salt into a bowl, add grated chocolate. Chop or beat in softened butter. Beat into a smooth paste with 4 tablespoons of milk.
Add egg, 1 tablespoon milk and vanilla essence, beat with a wooden spoon or electric mixer on medium speed for 2 minutes.
Half fill paper patty cases or greased patty tin with mixture. Bake in a moderate oven 15-20 minutes.
Cool and ice with Chocolate Soft Icing.
Chocolate Soft Icing
Ingredients
1 cup pure icing sugar
1 tablespoon melted butter
2 tablespoons cocoa
1 teaspoon Vanilla Essence
Warm water
Method
Sift sugar and cocoa, add melted butter and vanilla essence. Mix with a little warm water until of spreading consistency.
