French Toast with Strawberries
Ingredients
2 x 59g eggs
3/4 cup light coconut milk
1 tablespoon CSR SMART
1/4 teaspoon ground cinnamon
12 slices Pane da Casa Loaf
30g butter
Icing sugar, for dusting
Method
Whisk together eggs, coconut milk, CSR SMART & cinnamon.
Dip slices of bread into egg mixture to coat and shake off any excess. Bread should be moist but not soggy.
Heat butter in non-stick pan and cook for 2 minutes on each side or until golden and a little crispy. Remove to a plate.
Top with stewed berries and dust with icing sugar. Serves 4.
Stewed berries
1 punnet strawberries, sliced
2 tablespoons lemon juice
1 tablespoon extra CSR SMART
1 punnet raspberries
1. Combine strawberries, lemon juice and CSR SMART in a saucepan cook for 1 minute. Turn off heat and stir in raspberries.
