Sweet & Sour Pork
 Ingredients
500g lean pork loin
1/3 cup cornflour
1/3 cup water
Oil for deep-frying
1/2 red capsicum (sliced)
1/2 green capsicum (sliced)
1 onion sliced
Sauce
1 1/2 cups water
1 tablespoon tomato sauce
1 tablespoon tomato paste
1 teaspoon sugar
1 teaspoons brown vinegar
2 teaspoons cornflour
1/3 cup water
Extra salt
Method
Cut pork into 4cm pieces. Combine cornflour and water in bowl. Mix until smooth. Add pork, coat well.
Drop pork pieces (a few at a time) into deep hot oil. Fry until golden brown and cooked through (about 3 minutes) Drain on absorbent paper. Keep warm.
Combine 1 ½ cups water, tomato sauce, tomato paste, sugar, vinegar and vinegar in a bowl. Heat wok to hot, add 2 teaspoon oil, stir fry onion and capsicum for about 1 minute.
Add the mixture and stir until sauce boils. Reduce heat, simmer, uncovered for five minutes. Add combined cornflour, salt and extra water. Stir again until sauce boils and thickens.
Place pork on serving plate, spoon over content from wok.
